Batata Vada


Batata Vada - Maharashtrian Snack

Batata Vada

Batata Vada is a tasty Maharashtrian dish which is simple and easy to make. This dish is very popular in Mumbai and hence has become an integral part in life of Mumbaities.  You will find many shops selling Vada pav in Mumbai, which is nothing but Batata vada served with pav(bun).
 
It was raining heavily yesterday evening here in South Africa and I had the strong urge to eat batata vadas. So I made them at home.

Ingredients:
5 boiled potatoes mashed
4-5 green chillies (as per taste)
4-5 garlic cloves
1/2 tsp turmeric powder
1/2 tsp mustard seeds
few curry leaves
1/4 cup chopped cilantro
2 1/2 cups chickpea flour / besan
3/4 cup water (add to get correct consistency of the batter)
1/2 tsp red chilli powder
1/2 tsp baking soda
salt to taste
oil for frying

Servings: Makes about 11-12 vadas

Method:
1) In a grinder, grind the green chilies and garlic cloves to form a paste.
2) Add the green chili - garlic paste to the mashed potatoes and mix well.
3) In a skillet heat 3 tbsp oil and when its hot add mustard seeds and when they splutter add curry leaves and turmeric.
4) Now add the mashed potatoes mixed with green chili and garlic paste, chopped cilantro leaves and salt as per taste and mix well. Fry for a while and then remove from heat.
5) Make small balls from the above mixture and keep them ready.
6) For preparing the batter combine chickpea flour, chili powder and water along with some salt. Be careful while adding salt as we have already added salt to the potato mixture.
7) The batter should be thick enough to form a coating for the potato balls.
8) Heat oil for frying in a skillet.
9) Coat the potato balls with this batter and drop them into the skillet when the oil becomes hot. 
10) Fry them on medium heat till they become golden brown from all sides.
11) Serve them with pav, bread, red coconut chutney or green chutney, tomato sauce or plain tea.
