Fried Potato Tadka

Potatoes is a common vegetable loved by all. Fried Potato Tadka is a quick and easy to cook recipe which can be made by beginners as well.  It serves as an excellent side dish with rice and dal or curry.
Ingredients
1 potato
1/2 tsp mustard seeds
1/2 tsp red chili powder
1 small onion chopped finely
few curry leaves
oil for frying
salt as per taste
Method
1) Wash and peel the potato and cut it into cubes of about 3/4 inch.
2) In a kadhai or a skillet heat oil on high flame for deep frying.
3) When the oil becomes hot add the potato cubes and fry them till they become a little brown.
4) Drain the potato cubes on an absorbent paper.
5) In a pan heat about 2 tbsps of oil on medium heat.
6) When the oil becomes hot add mustard seeds and curry leaves.
7) Add chopped onions and fry till the onion becomes brown.
8) Add red chili powder, salt and mix well.
9) Finally add the fried potato cubes and mix with the rest of the ingredients in the pan.
10) Toss the fried potato cubes in the mixture.
11) Serve hot as a side dish with rice and dal.
