Spicy Chicken Curry Indian Style

If you want to make quick and Spicy Chicken Curry in Indian style, this is the recipe for you. No grinding of roasted whole masala involved and hence you can make it quicker and yet its very tasty. The recipe makes use of tomato which can be pureed (which is optional) or just chopped.
 
With Shravan (holy Hindu month) starting next week, people who observe Shravan  (abstain from eating non vegetarian food), consume non vegetarian food the previous weekend. Hence I am posting this spicy Indian style chicken recipe in tomato gravy for you to enjoy.  Try out this delicious recipe and let me know your feedback.

Ingredients
400 gms chicken
1 1/2 big onion finely chopped
2 big tomatoes finely chopped or pureed
1 bay leaf
3 cloves
1 inch cinnamon stick
1 tsp ginger garlic paste
2 tsp garam masala
2 tsp red chili powder
2 tsp chicken masala (I used Everest chicken masala)
1/2 cup oil
salt as per taste
cilantro leaves chopped for garnishing
 
For Marinade
2 tsp red chili powder
1/2 tsp turmeric powder
2 tsp ginger garlic paste
1 tsp corriander powder
 
Servings: 2-3
 
Method:
1) Wash and cut the chicken and make some slits on the chicken pieces. Marinade the chicken in the ingredients mentioned above for marinade. Keep it aside for at least 45 minutes
2) In a skillet heat oil and when it becomes hot add bay leaf, cinnamon stick and cloves. Fry them for a while.
3) Then add chopped onions and fry them till they turn brown.
3) Add ginger garlic paste and fry for a while.
4) Now add tomato puree (or pieces) and mix. If you are adding chopped tomato fry till they become soft and mushy.
6) Add all the spices one by one  red chili powder, garam masala and corriander powder and mix with the tomato paste.
7) If you have added chopped tomatoes then with the help of a spoon try to mash them in the skillet so that they become like a paste.
8) Now add the marinated chicken pieces and mix them so that they get coated with the gravy.  Keep frying till oil starts leaving the masala.
9) Finally add 3-4 cups of water depending on the thickness you need for the gravy and cover with lid and let it cook. 
10) Keep checking in between and add water if needed.
11) When chicken is cooked and soft remove from heat and garnish with chopped cilantro leaves.
12) Serve hot with rice or chapati or any indian bread.
