Bhindi Raita / Okra Dip

 Bhindi Raita, I wanted to make this since a long time. I personally love bhindi and this was something which I can make with my favourite vegetable.
Raitas are an inseparable part of Indian Food. It is basically an accompaniment which made with yogurt and served as a dip or a side dish with the rest of the food.  It may be seasoned with mustard seeds, cumin seeds which adds a nice flavor to the dish.
Ingredients
1 cup okra (bhindi) chopped (11 small okras)
oil for deep frying
2 green chillies slit
1 cup yogurt (curd)

For tempering
1 tbsp oil
1/4 tsp mustard seeds
1/4 tsp cumin seeds

Method
1) Wash the okra (bhindi) and dry them on a kitchen towel. If the okra is not dry it will be slimy when you cut it. Chop the okra into thin circular slices.
2) Deep fry the chopped okra (bhindi) till they are a little brown.
3) In about 1 tsp oil add these fried okras (bhindi) and chopped green chillies and saute for a while.
4) Now mix in yogurt with the okra chili mix.
5) In a small pan heat 1 tbsp oil on medium heat. Add mustard seeds. When they splutter add in the cumin seeds and curry leaves. Let it sizzle for a while. Now add this onto the yogurt - okra mix.
6) Serve as a side dish with rice.
