Egg Curry (Anda Masala / Baida Curry)

There are different styles in which egg curry is made which you will find on the Internet. This is my version of Egg Curry. Egg Curry is a spicy curry made with boiled eggs and cooked in onion - tomato gravy.  I have used chopped tomatoes directly for making this curry. You can puree the tomato if you feel. 
Eggs are generally cooked on Wednesday at our home because the other days (Friday, Saturday or Sunday) on which non veg food is consumed in our home are reserved for a more elaborate non veg meal (ie seafood or chicken). When I am lazy I  cook Anda Burji (because its simple and requires less time) and when I am in a mood to cook I make this Egg curry along with rice and chapati.
Ingredients
4 Eggs
1 medium onion
1 medium tomato
1 tsp ginger garlic paste
1 bay leaf
3 cloves
2 tsp red chili powder
1 tsp garam masala
2 tbsp oil
2 water + enough water to boil the eggs
salt as per taste
chopped cilantro leaves

Servings: 2-3
Method:
1) Boil the eggs in enough water and then cut them into two halves.
2) In a skillet add oil and heat on medium flame.
3) Add bay leaf, cloves and then chopped onions.
4) Fry till the onions are browned.
5) Now add ginger garlic paste and saute for a while.
6) Add chopped tomato and fry till they become soft and mushy.
7) Add red chili powder and garam masala and mix well.
8) Finally add boiled eggs and salt and mix so that the masala coats the eggs.
9) Now add water and let it simmer. Remove from heat when you have the desired thickness for the gravy.
10) Garnish with chopped cilantro leaves.
11) Serve with steamed rice, chapatis or any Indian bread.
