Ravyachi Kheer (Semolina Pudding)

Ravyachi Kheer  (Semolina Pudding) is a Maharashtrian delicacy made from semolina (rava). It is made using semolina,ghee, milk and sugar.

1 cup semolina (rava)
2 tbsp clarified butter (ghee)
6 cups milk (use whole or full cream milk)
3/4 cup + 1 tbsp sugar
1 tsp cardamom powder (or 5-6 green cardamoms crushed)
chopped almonds or cashew and raisins for garnishing

1) Heat ghee/clarified butter on medium in a wok.
2) When it becomes hot add semolina and fry on medium heat.
3) The semolina will be little aromatic and also start browning.
4) When it is just starts browning (Do not brown it to much) add milk and stir.
5) Add sugar and raisins and mix well.
6) When it starts thickening reduce the heat to low and add cardamom powder mix well.
7) Let it simmer for a while and then remove from heat.
8) Add chopped cashews, almonds and serve warm or hot.

1) Watch out when frying the semolina as it may turn brown immediately.
2) Do not fry the semolina on high heat.
